The olive oil industry generates enormous amounts of stones each year, which have the potential to be used as a biofuel but high content, negatively impacts combustion process. In addition, contain high-value antioxidants, and their exploitation can provide additional revenues for industry. this work, we report effect different extraction solvents on antioxidants activity. in vitro gastrointestinal digestion was evaluate content antioxidant activity stone extracts after digestion. obtained by aqueous ethanol solvent (50% vol) exhibited highest with DPPH IC50 1.27 mg mL ?1 ferric reducing power ( FRAP ) 6.33 AAE g .
